Mediterranean Tuna and Rice Fritatta Pie

Frittata is an egg-based Italian dish similar to an omelette or crustless quiche with various fillings. This recipe is using rice and tuna, delicious!

  • 1 pouch Tilda Premium USA Long Grain rice or Tilda Golden Vegetable Rice
  • 1tbsp olive oil
  • 1 small onion, peeled and finely chopped
  • 4 medium eggs
  • 1 small tin tuna, in water, drained
  • 100g Mini mozzarella balls
  • 50g parmesan cheese grated
  • 40g sundried tomatoes, chopped
  • 2 large handful fresh rocket leaves
  • Handful fresh basil leaves, shredded
  • Salt and freshly ground black pepper

How to make Mediterranean Tuna and Rice Fritatta Pie

  1. Heat the oil in a large non-stick frying pan and fry the onion for 5 minutes over a medium heat, stirring occasionally.

  2. Meanwhile, beat the eggs and season well

  3. Cook the rice according to pack instructions and add to the onions with the tuna, mozzarella balls, parmesan cheese and sundried tomatoes. Stir well and season to taste.

  4. Add a handful rocket and the basil leaves to the pan and gently combine before pouring over the egg mixture

  5. Cook over a medium heat until the eggs are set - pop under a hot grill to brown the top if desired before serving

  6. Cut into large slices and serve with the extra rocket on the side
