A fresh and light Caribbean-style mix in a salad leaf with Wholegrain Basmati and Wild Rice.
This recipe uses:
Wholegrain Steamed Basmati and Wild Rice
Separate the gem lettuce leaves from each other and place on a large serving plate
Top each leaf with a spoonful of the Wholegrain Basmati and Wild Rice
Sprinkle with the peppers, chives and tomatoes
Make a simple salsa by mixing the mango, red chilli, lime, olive oil and season well with salt and pepper
Serve the filled gem leaves with a little salsa on each
