A twist on Caribbean cuisine, through adding chipotle paste. The allspice and coconut milk can be dialed up to add in that island feel.

  • Tilda Coconut Steamed Basmati Rice
  • Onion
  • Garlic
  • Ginger
  • Sweet Potato
  • Peppers
  • Coconut Milk
  • Chipotle Paste
  • Allspice
  • Cod
  • Broccoli
  • Chilli
  • Garnish: Spring Onion, Chilli, Parsley, Lime


  1. Add onion, garlic and ginger to pan, with cubed sweet potatoes
  2. Add peppers, a bit of coconut milk, a tbsp of chipotle paste and a pinch of ground allspice
  3. Marinate cod in chipotle paste and set aside
  4. Add in broccoli and cod, leave to simmer. Steam the rice and add in with a touch of chilli
  5. Dish up and garnish with spring onion, chilli, parsley and a squeeze of lime
