This recipe uses:
Tomato and Basil Basmati Rice 250g
Fry chopped onion and peppers in olive oil for 5-7 minutes until softened.
Stir through the olives and the rice.
Heat through thoroughly and season to taste with salt and pepper. Keep warm.
Cut the halloumi into slices and griddle for a few minutes.
Stir torn rocket leaves through the rice and top with the griddled halloumi slices to serve.

• Start by slicing the halloumi into slices about 1cm thick, to ensure they cook evenly. • Heat a non-stick pan or grill over medium heat. You don’t need to use oil, as halloumi has a natural moisture that prevents sticking. • Place the slices in the pan and cook for 2-3 minutes on each side, or until they develop a beautiful golden crust with those signature grill marks

Halloumi tips • Pat your halloumi dry before you start cooking it, so it develops a crust. • Make sure your slices are around 1cm thick, so the halloumi cooks through but doesn’t fall apart. • Keep the heat at medium temperature to avoid burning the outside before the inside warms through. • Let the halloumi sit in the pan or on the grill for 2-3 minutes on each side. • Eat it straight away when it’s warm and soft.
