All the yummy Mediterranean flavours – tomato, basil, olive, feta – wrapped in a tortilla for a simple, easy and filling lunch.

This recipe uses:
Tomato and Basil Basmati Rice
Heat Tilda Tomato & Basil rice in the microwave according to pack instructions.
Place the tortilla on a plate and microwave for 15 seconds.
Use the back of a spoon or fork and mash the feta and olives in the middle of the tortilla leaving a 3-4cm border around the edge.
Top with rice and cooked chicken, season with black pepper.
Wrap up in foil or a napkin and cut on the diagonal and eat.
Tip: Grilled halloumi or pepper and cucumber strips would be a great vegetarian alternative to the chicken.
