Quick and easy spicy chicken with bell peppers, onions, and red chili.
2 tbs olive oil
2 large chicken breasts, sliced
1–2 tsp smoked paprika
½ tsp dried oregano
1 clove garlic, crushed
1 medium red onion, sliced
1 red bell pepper, sliced
1 red chili, sliced
Juice of half a lime
Salt and pepper to season
- Take your rice and get that on a medium heat and cook until tender. While the rice is cooking, heat the olive oil in a large pan, add the chicken, paprika, and oregano. Fry for 4-5 minutes until the chicken has browned and cooked through. Adjust your cooking time if the chicken is in large pieces.
- Add the garlic, red onion, red bell pepper, and red chili and cook until the vegetables have softened.
- Take your cooked rice add to the pan, stirring well.
- Stir through the lime juice and season to taste. Please check that the chicken is cooked through and hot before serving.
