Peri-Peri Chicken

Quick and easy spicy chicken with bell peppers, onions, and red chili.



2 Servings Tilda Pure Basmati
2 tbs olive oil
2 large chicken breasts, sliced
1–2 tsp smoked paprika
½ tsp dried oregano
1 clove garlic, crushed
1 medium red onion, sliced
1 red bell pepper, sliced
1 red chili, sliced
Juice of half a lime
Salt and pepper to season

  1. Take your rice and get that on a medium heat and cook until tender. While the rice is cooking, heat the olive oil in a large pan, add the chicken, paprika, and oregano. Fry for 4-5 minutes until the chicken has browned and cooked through. Adjust your cooking time if the chicken is in large pieces.
  2. Add the garlic, red onion, red bell pepper, and red chili and cook until the vegetables have softened.
  3. Take your cooked rice add to the pan, stirring well.
  4. Stir through the lime juice and season to taste. Please check that the chicken is cooked through and hot before serving.
