Oriental Duck and Mushroom Stir-Fry

The perfect alternative to Chinese takeout, this quick and easy stir-fry will give you oriental flavors in minutes.
2 Servings of Tilda Pure Basmati
4½oz cooked shredded duck
4½oz Thai vegetables
Half cup shiitake mushrooms
4 spring onions
Handful of cashew nuts
1 tsp ginger, grated
- Add your rice to the pan and cook until tender. Chop 4 spring onions and fry in a little hot oil. Then add 1 teaspoon of freshly grated ginger.
- Slice the shiitake mushrooms and Thai vegetables, perhaps including peanut shoots and bok choy, for example. Add to the pan and heat for about 3 minutes. For a stronger mushroom flavor, add in another 1/4 cup of mushrooms or to your taste.
- Stir in the cooked rice with the shredded, cooked duck and a handful of toasted cashew nuts.
- Serve with a drizzle of soy sauce.
