Vegetarian Burrito Bowl

All the delicious ingredients of a burrito – salad, rice, beans, avocado – inside of a bowl rather than a tortilla for a lighter but still very tasty lunch.

Feel free to add some chicken for a non-veggie option.

  • 1 cup Pure Basmati Rice
  • 1 tsp peri peri seasoning
  • 1 can red kidney beans, drained
  • 1 can of sweet corn, drained
  • 1 avocado, sliced
  • 1/2 iceberg lettuce leaves, shredded

How to make Vegetarian Burrito Bowl

  1. Prepare the Pure Basmati Rice according to package instructions, once cooked, add in the tsp of peri peri seasoning. Heat the beans in a microwave for 45 seconds.

  2. Add the lettuce, sweet corn and avocado around the rest of the bowl, then enjoy.

  3. This is a perfect base for other or alternative ingredients- chopped cucumber, chopped peppers, grated carrot, little gem lettuce instead of iceberg, nuts, seeds, cooked chicken, grilled halloumi and herbs all work well.
