Mexican Stacks

These Mexican stacks are layered with guacamole, cheese, and Lime & Herb Super Grains, making them an excellent appetizer ahead of a Mexican food dinner.
Ingredients
Method
- 1 pack Tilda Super Grains Lime & Herb
- ½ avocado, chopped
- 3 tbsps guacamole
- Squeeze of lemon juice
- 3 medium tomatoes, finely chopped
- Handful fresh coriander, finely chopped
- 125g cream cheese
- 2 tbsps sour cream
- 2 tsps Mexican seasoning (optional)
- A few basil leaves
- Salt and pepper to season
Notes
- Mix the avocado and guacamole together with a squeeze of lemon juice
- Press into the bottom of a tall ring mould about 6cm in diameter
- Follow with a layer of the Tilda Super Grains Lime & Herb, pressing down well
- Mix together the tomatoes and coriander and season with salt and pepper
- Add to ring mould and press down well on top of the grains
- Mix together the cream cheese, sour cream and Mexican seasonings if using
- Gently add to the layer of tomatoes
- Leave to chill in the refrigerator for 30 minutes or longer if you have time
- Carefully lift the ring mould off
- Garnish each with a couple of basil leaves
