Try this delicious Beetroot, Kale and Feta Salad With Orange and Chilli Dressing recipe, straight from the Tilda Kitchen.
Ingredients
Method
- 1 packet of Tilda White and Brown Steamed Basmati
- 50g of shredded, cooked beetroot
- 100g of feta cheese, crumbled
- A large handful of green curly kale leaves
- A handful of coriander, finely chopped
For the dressing
- The juice of 1 orange
- 8 tsps of sweet chilli sauce
- 4 tsps of olive oil
- Salt and pepper to taste
- 1 tsp of chia seeds
Notes
- Mix together the cold rice, shredded beetroot and coriander
- Gently stir through the crumbled feta cheese
- Arrange the kale leaves on a large serving dish and spoon over the rice mixture
- Make the dressing by blending the orange juice, chilli sauce and olive oil
- Season the dressing to taste and stir in the chia seeds
- Drizzle the dressing over the salad and serve
