Spicy Pilaf

A spicy pilaf with zucchini, lamb, and mushrooms.


Ingredients

Method

  • 1 cup Tilda® Extra Long Grand Basmati Rice
  • 1 Tbsp vegetable oil
  • ½ cup red bell pepper, diced
  • 1 cup zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 cup red onion, sliced
  • ½ tsp chili powder
  • ½ lb lamb steak, thinly sliced
  • 1 Tbsp almonds, sliced, toasted

  1. Prepare rice according to package directions.
  2. Meanwhile, heat oil in a medium sauté pan and add the bell pepper, zucchini, mushrooms, onion and chili powder
  3. Sauté for 5 minutes, add the lamb and sauté until lightly browned.
  4. Serve over rice, garnish with toasted almonds.
