Wholegrain Rice Energy Balls

Pop these in your lunchbox to beat the afternoon slump and give yourself an energy burst throughout the day.




  • 2 packs of Tilda Wholegrain Steamed Basmati rice
  • 2 tbsp coconut oil
  • 2 tbsp almond butter
  • 3 tbsp honey
  • 2 tbsp cacao nibs
  • 50g sultanas
  • 2 tsp cinnamon
  • 75g oats
  • 100g desiccated coconut


  1. Cook the rice as per the instructions on the pack, drain and allow to cool

  2. Melt the coconut oil in a pan over a gentle heat

  3. Add the almond butter, honey, cacao nibs, sultanas, cinnamon, and oats and combine

  4. Add the cooked rice and mix together

  5. Pour the desiccated coconut on a plate

  6. Allow the mixture to cool until it is cool enough to touch

  7. Shape the mixture into small balls and roll in the coconut

  8. Refrigerate for a few hours or overnight
