Vegetable Rogan Josh

  • 120g Tilda Pure Basmati rice
  • 150g baby new potatoes, diced
  • 150g cauliflower florets
  • 150g baby carrots, halved
  • 2 tbsps oil
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 1 thumb ginger, grated
  • 3 tbsps rogan josh paste (vegan version if needed)
  • 1/2 tsp toasted black onion seeds
  • 200g canned chopped tomatoes
  • 200ml water
  • 100g chickpeas, drained
  • 1 large tomato, cut into quarters
  • Salt and black pepper, to season

Method

  1. Cook the potatoes, cauliflower and carrots in boiling water for 10-15 minutes until soft. Drain and cool

  2. Heat the oil in a large pan and add the onions, garlic and ginger and fry for about 5 minutes to soften

  3. Add the Rogan Josh paste and black onion seeds and heat for a couple of minutes

  4. Add the chopped tomatoes, cooked vegetables, chickpeas and water and simmer for 5- 10 minutes

  5. Add the fresh tomato quarters and heat for a couple of minutes

  6. Season with salt and pepper and serve piping hot

  7. Rinse rice under cold water till clear, boil for 10 minutes and drain. Serve with the rogan josh curry
