Mujadara - Lentils and Rice with Crispy Onions

Home cooking doesn’t get simpler than Mujadara: rice, lentils and onions, and it’s so easy to take to the next level by adding extras into the rice. Courtesy of Ed Tan.

- 180g Tilda Pure Basmati Rice
- One large onion
- Can of lentils
- Parsley (dried or fresh)
- Pomegranate seeds (optional)
- Yoghurt (optional)
- Thinly slice the onion
- Caramelise one half in a frying pan on a low medium heat, until dark brown but not burned. This will take about 20 minutes
- Once done, pour the onions in to the rice and cook the rice according to packet instructions, with no deviation from water amount etc
- While the rice is cooking, shallow fry the rest of the onions in batches until crispy
- Combine the rice cooked with onions once done, with the can of lentils in equal amounts
- Garnish with parsley and pomegranate seeds, and serve with yoghurt on the side
