Wholegrain Rice Energy Balls

Pop these in your lunchbox to beat the afternoon slump and give yourself an energy burst throughout the day.

- 2 packs of Tilda Wholegrain Steamed Basmati rice
- 2 tbsp coconut oil
- 2 tbsp almond butter
- 3 tbsp honey
- 2 tbsp cacao nibs
- 50g sultanas
- 2 tsp cinnamon
- 75g oats
- 100g desiccated coconut
- Cook the rice as per the instructions on the pack, drain and allow to cool
- Melt the coconut oil in a pan over a gentle heat
- Add the almond butter, honey, cacao nibs, sultanas, cinnamon, and oats and combine
- Add the cooked rice and mix together
- Pour the desiccated coconut on a plate
- Allow the mixture to cool until it is cool enough to touch
- Shape the mixture into small balls and roll in the coconut
- Refrigerate for a few hours or overnight
