- Tilda Coconut Steamed Basmati Rice
- Shallots
- Ginger
- Cauliflower
- Peppers
- Aubergine
- Turmeric
- Coconut Milk
- Chillies
- Coriander
- Cod
Cook

Add shallots, ginger, turmeric and mustard seeds into a pan. In another pan char the cauliflower and set aside

Add coconut milk, let it simmer whilst the flavours infuse

Add aubergine, peppers, charred cauliflower, chillies and coriander

Add in the cod and leave to simmer. Season with salt and pepper to taste

Plate the rice in a circle with the curry in the middle
