A freestyle spin on Thai, using carrots and courgettes, but still building on the foundations of green curry paste and coconut.

  • Tilda Coconut, Chilli & Lemongrass Steamed Basmati Rice
  • Carrot
  • Shallots
  • Courgette
  • Garlic
  • King Prawns
  • Spinach
  • Desiccated Coconut
  • Chilli
  • Coconut Milk
  • Green Curry Paste
  • Tamarind Paste
  • Fish Sauce


  1. Chop all ingredients and set aside. Toast the desiccated coconut in a pan
  2. Add spinach and rice to a bowl
  3. Add king prawns, garlic, chilli, courgette, carrot, shallot and onion into pan and fry. Add In green curry paste
  4. Add in tamarind paste, fish sauce and coconut milk. Once cooked, add to rice and squeeze in a juice of a lime
  5. Plate and garnish with toasted coconut
