Ready in less than 10 minutes, this tasty, quick and easy salad is the perfect addition to a BBQ on a warm, summer evening. It is also the perfect nutritious lunch that includes an extra source of fibre from our delicious Wholegrain Basmati & Quinoa.

1 pouch Tilda Wholegrain Basmati & Quinoa
1 small ripe mango, diced
1 ripe baby avocado, diced
20g shelled pistachios
60g pomegranate seeds
4 salad onions, thinly sliced
2 tbsp. white balsamic vinegar
1 tsp toasted sesame oil
- Heat the rice according to the pack instructions. Mix the mango, avocado, pistachios, pomegranate seeds and salad onions together and stir into the rice mix.
- Whisk together the oil and vinegar and toss the salad. Serve in a large bowl, with raita on the side if you wish.
- TIP For a quick raita, stir together Greek yoghurt, grated cucumber and torn mint.
