Leftover Chicken Fried Rice

A perfect dish to cook with leftover ingredients you may have left from the previous day.

  • 1 pouch Indonesian Stir Fried Rice
  • 2 tbsps. oil
  • 40g spring onions, sliced
  • ½ onion, sliced
  • 80g cooked carrots, cut into batons
  • 200g cooked chicken, sliced
  • 2 tsps soy sauce
  • Handful unsalted peanuts
  • Salt and black pepper to season
  • Serve with Cucumber, tomatoes, crispy onions and a fried egg on top

How to make Leftover Chicken Fried Rice

  1. Heat the oil in a large pan or wok and add the spring onions, carrots and onions and fry for 3 - 5 minutes to soften

  2. Add the chicken and soy sauce and fry for a few more minutes

  3. Heat Tilda Indonesian Stir Fry Rice in the microwave for 1 minute and add to the stir fry mix

  4. Sprinkle in the peanuts and season with salt and pepper

  5. Serve piping hot with a fried egg on top
