This recipe uses:
Spicy Mexican Long Grain Rice 250g
Mix the marinade ingredient together and coat the pork
Add to a hot pan and stir fry over a high heat for 2 minutes
Add red pepper and onion and stir fry for a further 6-8 minutes until vegetables are softened
Cook the rice according to pack instructions. Add to the pan and stir well. Season to taste
Heat the tacos according to pack instructions
Fill with the pork and rice mixture and top with chopped cherry tomatoes and grated cheese
Sprinkle with chopped coriander to serve
