Dubai Chocolate Rice Pudding

- For the Rice Pudding:
- 160g Tilda Pudding Rice
- 750ml Whole milk
- 45g Light brown sugar
- 1 tsp Vanilla bean paste
- 20g Dark chocolate
- For the Pistachio Layer:
- 60g Pistachio crème
- 30g Kadayif
- ½ tsp Tahini
- Pinch of salt
- Garnish:
- 4 Strawberries
- 4 Dark chocolate squares

- • Swap the whole milk for your favourite dairy-free alternative suitable for cooking with (we recommend Tilda rice milk).
- • Can’t get hold of kadayif? Scrunch up some shredded wheat style breakfast cereal.
How to make Dubai Chocolate Rice Pudding

Put the rice, milk, light brown sugar and vanilla bean paste into a saucepan.

Bring to a gentle simmer and cook, stirring frequently with a wooden spoon, until the rice is tender and much of the liquid has been absorbed (around 25 minutes).

Meanwhile prepare the pistachio layer by mixing the pistachio crème, tahini, pinch of salt and the kadayif together until well combined.

Take the pan off the heat and divide the rice pudding into 2 bowls.

Push 20g dark chocolate into one portion of rice pudding, let it melt for 30 seconds and then stir it into the rice pudding.

Spoon a small amount of the pistachio mixture into the base of 4 serving glasses.

Next add a layer of vanilla rice pudding, spreading it to the edge of each glass.

Top with a similar amount of chocolate rice pudding.

Repeat steps 6-8 once more.

Use the remaining pistachio mixture to top each serving glass, covering the rice completely (this prevents the dessert from forming a skin).

When ready to serve garnish each dessert with a square of dark chocolate and a fresh strawberry.
Expert Tips
• These Dubai chocolate rice puddings can be served warm or cold.
• Use small serving glasses that can hold around 150ml liquid. Straight-sided glasses with a narrow neck are ideal. Wider glasses will mean that you may need a little extra pistachio mixture in order to cover the top completely.
• The rice pudding will thicken as it cools as the rice will continue to absorb the liquid - if your rice pudding is too stiff to transfer to the serving glasses stir a splash of milk into it to loosen it again.
• Take your time layering up your desserts – using small spoons to put the rice pudding into each glass can help to achieve a neat finish.
