Vegetable Rogan Josh

1 sachet Tilda Pure Basmati rice
150g new potatoes, diced
150g cauliflower florets
150g baby carrots, halved
2 tbsp oil
1 onion, finely chopped
1 clove garlic, crushed
1 thumb ginger, grated
3 tbsp rogan josh paste (vegan version if needed)
1/2 tsp toasted black onion seeds
200g canned chopped tomatoes
200ml water
100g chickpeas, drained
1 large tomato, cut into quarters
Salt and black pepper, to season

  1. Cook the potatoes, cauliflower and carrots in boiling water for 10-15 minutes until soft. Drain and cool
  2. Heat the oil in a large pan and add the onions, garlic and ginger and fry for about 5 minutes to soften
  3. Add the Rogan Josh paste and black onion seeds and heat for a couple of minutes
  4. Add the chopped tomatoes, cooked vegetables, chickpeas and water and simmer for 5-10 minutes
  5. Add the fresh tomato quarters and heat for a couple of minutes
  6. Season with salt and pepper and serve piping hot
  7. Heat the Tilda Pure Basmati rice according to package directions and serve with the curry
