Quick and Easy Chilli Con Carne

Quick and easy spicy chilli using ground turkey for a lighter feel. The chilli also makes a great filling when paired with tortillas for fajitas!

1 sachet Tilda Pure Basmati Rice
1 tbsp vegetable oil
1 large onion, chopped
2 tsp chilli paste – we like chipotle chilli paste
500g lean ground turkey
1 small can beans of your choice, drained i.e. kidney, cannellini, black eye etc.
1 large can chopped tomatoes
Salt and pepper to season
2 tbsp water

  1. Fry onions in a little oil until soft, add the chilli paste
  2. Add the ground turkey and fry until browned all over
  3. Add the beans, tomatoes and simmer for 5 minutes
  4. Add the rice to the pan and cook, covered, over a low heat for a further 5 minutes
  5. Season to taste and add a little water if needed
  6. Serve with sour cream dip (optional)
