Quick and Easy Chilli Con Carne

Quick and easy spicy chilli using ground turkey for a lighter feel. The chilli also makes a great filling when paired with tortillas for fajitas!

- 1 sachet Tilda Pure Basmati Rice
- 1 tbsp vegetable oil
- 1 large onion, chopped
- 2 tsp chilli paste – we like chipotle chilli paste
- 500g lean ground turkey
- 1 small can beans of your choice, drained i.e. kidney, cannellini, black eye etc.
- 1 large can chopped tomatoes
- Salt and pepper to season
- 2 tbsp water
- Fry onions in a little oil until soft, add the chilli paste
- Add the ground turkey and fry until browned all over
- Add the beans, tomatoes and simmer for 5 minutes
- Add the rice to the pan and cook, covered, over a low heat for a further 5 minutes
- Season to taste and add a little water if needed
- Serve with sour cream dip (optional)
