- 1 pouch Tilda Hot Jalapeno Rice
- 1 tbsp sunflower oil
- 1 red onion, chopped
- 1 red pepper, chopped
- 1 tin black beans, drained
- 50g sweetcorn
- 100ml vegetable stock
- Salt & pepper
- A handful of fresh coriander, chopped
- 1 lime, cut into wedges
- Fry the onion and pepper in the oil for 5-7 minutes until softened
- Add the sweetcorn, black beans, Tilda Wholegrain Hot Jalapeno rice and vegetable stock. Heat until the liquid is absorbed. Season well
- Serve garnished with the coriander and lime wedges
