Cajun Dirty Rice with Chorizo and Prawns with Tilda Dry Basmati

  • 500g Tilda Pure Basmati Rice
  • x1 Stock Cube (vegetable or chicken, as you wish)
  • 2 Tbs Olive Oil
  • ½ Cup Yellow Peppers, diced
  • ½ Cup Onion, diced
  • ½ Cup Celery, thinly sliced
  • 3 Cloves of Garlic, minced
  • 2 Chorizo Sausages, sliced
  • 3 Tbs Cajun Spice Mix
  • 2 Tbs Tomato Puree
  • 300g Cooked Prawns
  • 1 Tbs Lime juice
  • Salt and pepper to taste
  • 1 Tbs Butter
  • Handful of parsley

How to make Cajun Dirty Rice with Chorizo and Prawns with Tilda Dry Basmati

  1. Put rice into a pan and wash with cold water to remove any excess starch. In a measuring jug, dissolve x1 stock cube with x4 cups of hot water and pour this into the rice. Cook the rice until it is al dente and set aside. Leftover rice also works well.

  3. Heat the olive oil in a non-stick pan and add the peppers, onion, celery, and garlic. Cook until softened, about 2-3 minutes.

  4. Add the chorizo and fry for a further 2-3 minutes. Stirring thoroughly.

  5. Add the cajun seasoning and tomato paste and mix thoroughly. Now add the prawns and fry for 1-2 minutes.

  6. Mix in the rice. Add a bit of water if it is too dry and needs it.

  7. Add the butter and mix this all the ingredients. Season with salt and pepper, lime juice and sprinkle with parsley.
