- 400g Tilda Extra Large Basmati rice
- Ready-made Kabsa spice mix (includes all spices and salt)
- Chicken
- 1 Onion
- 1 Tomato
- Tortilla bread
- Cucumber with yogurt
- Pine nuts (optional)
- Fresh coriander
Method

Sauté onion and tomato in a little olive oil until softened

Add the chicken (we used boneless thighs) and stir until lightly browned

Add the soaked rice and mix well with the ingredients

Pour in boiling water, add the kabsa spice mix, and stir well

Bring the mixture to a boil, then reduce heat and let it cook gently until done

Prepare the tortilla bread and place a portion of rice and chicken in the center

Add cucumber with yogurt, pine nuts, and fresh coriander as desired

Roll the tortilla tightly

Place the rolled tortilla in a skillet or grill to get a golden, crispy color.
