- 250g Tilda Soy & Ginger rice
- 300g raw tiger prawns (peeled)
- 1 onion, finely chopped
- 1 red bell pepper finely chopped
- 1 garlic clove, minced
- 1 tbsp oil
- 1 Red Thai curry paste (store-bought)
- 200ml coconut milk
- 100ml water
How to make Soy & Ginger Rice with Thai Prawn Curry

1. In a pan, heat oil, fry onion, bell pepper and garlic

2. Add curry paste and cook for 1 min

3. Add coconut milk, simmer 3–4 minutes

4. Add prawns, cook 4–5 minutes until pink

5. Microwave rice for 2 mins

6. Serve curry over soy & ginger rice
