- 1 small pumpkin
- ½ cup Tilda XXL Basmati Rice, rinsed
- 200 g shrimp, peeled and cleaned
- 150 g mushrooms, sliced
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp olive oil
- Salt and black pepper, to taste
- Fresh parsley, chopped
- Lemon slices, for serving
Method

Sauté the onion and garlic in olive oil.

Add the mushrooms and cook for 1–2 minutes.

Add the shrimp and season with salt and black pepper.

Add the rinsed Tilda Rice and mix well.

Fill the pumpkin with the mixture.

Bake until perfectly cooked.

Garnish with fresh parsley and serve with lemon slices.
