Fiesta Rice Cup with mango and Pineapple Salsa

  • 150g Rice
  • 1 onion diced
  • 50g Mixed diced peppers
  • 50g carrots diced
  • 50 g sweetcorn
  • 3Teaspoon smoked Paprika
  • 3 Teaspoon cumin
  • 3 Teaspoon tumeric
  • 2 Teaspoon of garlic paste
  • 50g stock powder
  • Litre water
  • Salt and pepper to taste.
  • 100g Coriander
  • 20g Chilli
  • Pack of tortillas
  •  
  • Salsa
  • 100g pineapple diced
  • 100g mango diced
  • One red pepper diced
  • One red onion diced finely
  • Lime
  • Salt coriander
  •  

Method

  1. Add all of the rice ingredients to a cooking tin and cook in the oven on 180 until all the water is absorbed and vegetables are tender.

  2. Season with salt and pepper

  3. In a bowl add the pineapple, mango, red pepper and onion. Mix together and add the juice of a lime. Season with salt and add coriander.

  4. Get a muffin baking tray and oil cut the tortillas into half and place in the tray to form a small cup. Bake for five minutes.

  5. Place the rice into the cups and add salsa Add chilli’s for extra spice and crunch.
