Introduction to cinnamon
Cinnamon is the dried bark of the cassia tree, and it is a central spice in traditional garam masala where its warmth, citrus notes and woody pungency make it a perfect addition.
Adding a little ground cinnamon to to a host of curries, biryanis and pulaos is a great way to enhance the flavours of your dish as it works well with both savoury and sweet recipes. Cinnamon is also believed to have a host of health benefits and healing qualities.
