Basmati with Rocket & Sun Blush Tomatoes
- Serves 20
- 800g Tilda Easy Cook Basmati Rice, cooked
- 150-200ml french vinaigrette
- 150g rocket
- 200g tomatoes, sunblush
- 2 red peppers, sliced
Toss the hot rice with the vinaigrette and allow to cool.
Mix through the rocket, tomatoes (including the oil from the tomatoes) and peppers, season and serve with griddled fish/meat.
