Basmati with Rocket & Sun Blush Tomatoes
- Serves 20
- 800g Tilda Pure Basmati Rice, cooked
- 150-200ml french vinaigrette
- 150g rocket
- 200g tomatoes, sunblush
- 2 red capsicums, sliced
Cook the rice as per pack instructions, strain and then toss the hot rice with the vinaigrette and allow to cool.
Chop all of the vegetables. When the rice is completely cool, mix through the rocket, tomatoes (including the oil from the tomatoes) and capsicums, season and serve with griddled fish/meat if desired.
