Basmati with Rocket & Sun Blush Tomatoes
- Serves 20
- 800g Tilda Pure Basmati Rice, cooked
- 150-200ml french vinaigrette
- 150g rocket
- 200g tomatoes, sunblush
- 2 red capsicums, sliced
- Cook the rice as per pack instructions, strain and then toss the hot rice with the vinaigrette and allow to cool.
- Chop all of the vegetables. When the rice is completely cool, mix through the rocket, tomatoes (including the oil from the tomatoes) and capsicums, season and serve with griddled fish/meat if desired.
