Basmati with Rocket & Sun Blush Tomatoes
- Serves 20
150-200ml french vinaigrette
200g tomatoes, sunblush
2 red peppers, sliced
- Toss the hot rice with the vinaigrette and allow to cool.
- Mix through the rocket, tomatoes (including the oil from the tomatoes) and peppers, season and serve with griddled fish/meat.
