Steriliseer een grote glazen pot. Kook \u2018m 10 minuten uit, laat vervolgens uitlekken en afkoelen.<\/p>\n<p>2. Haal de bladeren van de kool en doe ze in een grote kom. Voeg de fijngehakte knoflook, geraspte gember, chilivlokken, vissaus en zout toe. Meng alles 1 minuut stevig met je handen en kneus daarbij de koolbladeren lichtjes. Laat 1 uur rusten zodat het vocht vrijkomt. Meng daarna nogmaals goed door.<\/p>\n<p>3. Schep de kool beetje bij beetje in de pot en druk stevig aan om luchtbellen te vermijden. Giet het vrijgekomen vocht erbij. Leg er een glazen gewicht (of een inzetstuk) op zodat alles onder het vocht blijft en er geen lucht aan kan. Zorg wel dat er nog wat ruimte is tussen de bereiding en het deksel.<\/p>\n<p>4. Sluit de pot af en zet uit de buurt van direct zonlicht. Laat 2 tot 5 dagen fermenteren. Hoe langer, hoe zuurder je kimchi wordt. Zet de pot wel op een bord, voor het geval het sap overloopt. Controleer ook dagelijks of je moet ontluchten. Indien nodig draai je kort het deksel open.<\/p>\n<p>5. Na fermentatie kan je de kimchi tot 1 jaar in de koelkast bewaren.<\/p>\n<p>6. Jonge kimchi is heerlijk als frisse topping. Zuurdere kimchi is geknipt voor warme bereidingen zoals noedelbouillons, omeletten of gebakken rijst.<\/p>\n<hr \/>\n<p><strong>Tips:<\/strong><\/p>\n<p>\u2022 Zorg dat al je keukengerei \u2014 \u00e9n je handen \u2014 brandschoon zijn.<\/p>\n<p>\u2022 Reken ongeveer 2% zout ten opzichte van het groentegewicht.<\/p>\n<p>\u2022 Variaties? Vervang de helft van de vissaus door sojasaus.
