L&#8217;assenza di glutine, ad esempio, ne fa un&#8217;ottima scelta per i celiaci, l&#8217;elevata concentrazione di amminoacidi per vegetariani e vegani, il basso indice glicemico per i diabetici. Anche chi non ha esigenze alimentari specifiche, tuttavia, non potr\u00e0 pi\u00f9 farne a meno, soprattutto dopo aver scoperto che prolunga il senso di saziet\u00e0 nel tempo, calmando i morsi della fame.<\/p>\n<p>La quinoa si prepara pi\u00f9 o meno come il riso. Innanzitutto, va sciacquata per rimuovere la naturale pellicola di saponine di cui \u00e8 rivestita, che pu\u00f2 risultare amara. Per la cottura, il rapporto fra acqua e quinoa \u00e8 di 2:1. Versa tutto in una casseruola, copri e lascia sobbollire a fuoco lento per circa 15 minuti, o comunque fin quando il germe non si separa dal seme. Verifica che il germe sia al dente e che la quinoa abbia una consistenza morbida, con un vago aroma di frutta secca. Durante la cottura la quinoa diventa quasi trasparente e quadruplica il suo volume iniziale.<\/p>\n<p>In virt\u00f9 della sua versatilit\u00e0 e del sapore piacevole, la quinoa \u00e8 un alimento facile da integrare nella dieta quotidiana. Semplice e veloce da preparare, \u00e8 ottima sia come complemento al riso che servita fredda, in insalata.
