It contains spices, veggies, and usually one meat, ranging from chicken, mutton or lamb, to prawn and other kinds of fish. It\u2019s not 100% clear where the dish originated, but it\u2019s generally understood to have been dreamt up somewhere within the Persian empire, which covers modern-day Iran, Turkey and Syria. It was brought to India by the Mughals \u2013 a Muslim dynasty which came to rule over the Hindu population.<\/span><\/p>\n<p><span style=\"font-weight: 300;\">The biryani \u2013 pronounced <\/span><i><span style=\"font-weight: 300;\">bi-ree-aan-ee<\/span><\/i><span style=\"font-weight: 300;\"> \u2013 is thought to have come from the Persian <\/span><i><span style=\"font-weight: 300;\">birinj<\/span><\/i><span style=\"font-weight: 300;\">, which just means <\/span><i><span style=\"font-weight: 300;\">rice<\/span><\/i><span style=\"font-weight: 300;\">. Or perhaps it\u2019s from <\/span><i><span style=\"font-weight: 300;\">biryanan<\/span><\/i><span style=\"font-weight: 300;\">, which means <\/span><i><span style=\"font-weight: 300;\">to fry<\/span><\/i><span style=\"font-weight: 300;\">. The jury\u2019s out.\u00a0 Wherever it got its name, it\u2019s a very popular dish in northern India, and a common sight on Indian, Nepalese and Bangladeshi menus right here in the UK.<\/span><\/p>\n<h3><span style=\"font-weight: 600;\">Are there different kinds of biryani?<\/span><\/h3>\n<p><span style=\"font-weight: 300;\">\u00a0<\/span><span style=\"font-weight: 300;\">In India alone, there are tons of different biryanis, known to have been enjoyed by the Mughal leaders who brought the dish to India in the first place. Let\u2019s talk about a few of our favourites\u2026<\/span><\/p>\n<h4><span style=\"font-weight: 600;\">Thalasseery biryani<\/span><\/h4>\n<p><span style=\"font-weight: 300;\">This mild, fishy biryani is popular along the Malabar Coast, which runs up the western edge of the tropical subcontinent. Instead of lamb or goat, it\u2019s made with prawns, alongside lots of ghee and spices including onion, ginger, garlic, lime and coriander.<\/span><\/p>\n<h4><span style=\"font-weight: 600;\">Awadhi biryani<\/span><\/h4>\n<p><span style=\"font-weight: 300;\">This tasty biryani is from the city of Lucknow in northern India. It stands out from the rest due to the way it\u2019s cooked \u2013 low and slow over a fire in a closed clay pot. The <\/span><i><span style=\"font-weight: 300;\">dum pukht<\/span><\/i><span style=\"font-weight: 300;\"> cooking method is basically the same as using a slow cooker, and can be left to simmer away for 24 hours. The dish itself contains saffron and cinnamon to add a bit of depth to the rice, which is mixed with spicy chicken or beef.<\/span><\/p>\n<h4><span style=\"font-weight: 600;\">Beary biryani<\/span><\/h4>\n<p><span style=\"font-weight: 300;\">Despite its name, this biryani contains absolutely zero bears. It\u2019s from south Karnataka, on the southwest tip of India, and can be made mild or spicy, depending on where it\u2019s served. The ghee and spice mixtures are joined by rice and a protein, which is generally chicken, beef or fish.<\/span><\/p>\n<h4><span style=\"font-weight: 600;\">Hyderabadi biryani<\/span><\/h4>\n<p><span style=\"font-weight: 300;\">There are two main variations of biryani in the Telangana state capital of Hyderabad \u2013 <\/span><i><span style=\"font-weight: 300;\">pakki<\/span><\/i><span style=\"font-weight: 300;\"> and <\/span><i><span style=\"font-weight: 300;\">kacchi<\/span><\/i><span style=\"font-weight: 300;\">. Both dishes are thought to date back to the Mughal invasion in the late 17<\/span><span style=\"font-weight: 300;\">th<\/span><span style=\"font-weight: 300;\"> century. The pakki consists of separately cooked rice and meat, which are then added together just before serving. While the kacchi is made with raw cuts of marinated meat (chicken or lamb), which are stuffed between layers of basmati, and cooked slowly in a pot over a fire with lots of spices.<\/span><\/p>\n\n            <\/div>\n            <\/div>\n<\/section>\n\n\n<section class=\"content-section content-section--top-mask content-section--yellow\">\n        \n    <div class=\"image-with-text container container--small\">\n                    <div class=\"image-with-text__content\">\n                <h3><span style=\"font-weight: 600;\">Which spices are used in biryanis?<\/span><\/h3>\n<p><span style=\"font-weight: 300;\">Although most biryanis are on the milder side, some do pack a bit of a punch. In most cases, the spices on a shopping list will feature the likes of ginger, garlic, coriander, saffron and cinnamon. Different kinds of rice can be layered for further aesthetic appeal, showing how much extra care has been taken in preparing the dish.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 300;\">When it comes to condiments and extras, biryanis are often served with raita (a yoghurt-based side dish), or a salan (a spicy gravy) to balance the flavours. And although biryani is enjoyed all year round, it\u2019s also considered a celebratory dish served during Eid and Ramadan festivals, weddings, and other special occasions across india.\u00a0<\/span><\/p>\n<h3><span style=\"font-weight: 600;\">Traditional cooking style<\/span><\/h3>\n<p><span style=\"font-weight: 300;\">Biryani is traditionally prepared with the dum cooking technique. <\/span><i><span style=\"font-weight: 300;\">Dum<\/span><\/i><span style=\"font-weight: 300;\"> means to breathe \u2013 to keep food on a low fire \u2013<\/span><span style=\"font-weight: 300;\"> a bit like an old fashioned <\/span><a href=\"https:\/\/www.tilda.com\/blog\/equipment-guide\/your-ultimate-guide-to-slow-cookers\/\"><span style=\"font-weight: 300;\">slow cooker<\/span><\/a><span style=\"font-weight: 300;\">. All the ingredients are layered inside a sealed pot over a low-burning fire to cook in their own steam, tenderising the meat and releasing all the lovely flavours.
