Tilli’s Salmon Balls

Tasty salmon bites with a savoury twist from cheese and parsley. Have fun creating and turn them into footballs – use spinach leaves as a base for a football pitch, mark out a pitch with sticks of red pepper, carrots, cucumber, cherry tomatoes etc and use houmous dip for the centre spot.

  • 1 pack Tilda Sunshine Vegetable rice
  • 1 cooked salmon fillet, flaked (or 1 tin red/pink salmon boneless)
  • 1 egg beaten
  • 1 tbsp chopped parsley
  • 1 tbsp parmesan cheese, grated
  • Breadcrumbs for coating
  • Oil for shallow frying

How to make Tilli’s Salmon Balls

  1. In a large bowl mix together the rice, flaked fish, parsley, cheese and egg with a fork

  2. Form by hand into 12 small balls

  3. Roll into breadcrumbs

  4. Shallow fry for 8-10 minutes until golden brown all over
