Pad Thai with rice

This vegetarian Pad Thai is made with our delicious Toasted Coconut Wholegrain Jasmine rice and topped with peanuts for a tasty, moreish crunch. Ready in less than 20 minutes, this tasty Thai dish is the perfect midweek meal.
Ingredients
- 1 pouch Tilda Toasted Coconut Wholegrain Jasmine rice
- 1 tbsp sesame oil
- 4 spring onions, finely sliced
- 1 pak choi, chopped
- 1/2 red chilli, finely sliced
- 1/2 pack plain tofu, cubed
- A handful of peanuts
- Soy sauce to season
- Coriander, chopped
Cook

Begin by frying the onion and spring onions in the sesame oil for 5-7 minutes until softened

Fry tofu until golden

Add the pak choi and chilli and fry for a further few minutes

Stir through the tofu and Tilda Toasted Coconut & Wholegrain Jasmine rice and heat through thoroughly

Season with soy sauce and finish with a scattering of peanuts
