Pad Thai with rice

This vegetarian Pad Thai is made with our delicious Toasted Coconut Wholegrain Jasmine rice and topped with peanuts for a tasty, moreish crunch. Ready in less than 20 minutes, this tasty Thai dish is the perfect midweek meal.


  • 1 pouch Tilda Toasted Coconut Wholegrain Jasmine rice
  • 1 tbsp sesame oil
  • 4 spring onions, finely sliced
  • 1 pak choi, chopped
  • 1/2 red chilli, finely sliced
  • 1/2 pack plain tofu, cubed
  • A handful of peanuts
  • Soy sauce to season
  • Coriander, chopped


  1. Begin by frying the onion and spring onions in the sesame oil for 5-7 minutes until softened
  2. Fry tofu until golden
  3. Add the pak choi and chilli and fry for a further few minutes
  4. Stir through the tofu and Tilda Toasted Coconut & Wholegrain Jasmine rice and heat through thoroughly
  5. Season with soy sauce and finish with a scattering of peanuts
