Mixed Grain and Avocado Salad

This warm salad will provide a rainbow of colours to brighten up any winter’s day. It’s rich in vitamin A, important for a healthy immune system, and is ready in less than 10 minutes.

  • Vegetarian

Ingredients

  • 1 pouch Tilda Brown Basmati & Quinoa
  • 1 small ripe mango, diced
  • 1 ripe baby avocado, diced
  • 20g shelled pistachios
  • 60g pomegranate seeds
  • 4 salad onions, thinly sliced
  • 2 tbsp. white balsamic vinegar

Cook

  1. Heat the grain pouch according to the pack instructions. Mix the mango, avocado, pistachios, pomegranate seeds and salad onions together and stir into the rice mix
  2. Whisk together the oil and vinegar and toss the salad. Serve in a large bowl, with raita on the side if you wish.
  3. TIP For a quick raita, stir together Waitrose Greek Natural Fat Free Yoghurt, grated cucumber and torn mint.
