Mexican Stacks

These Mexican stacks are layered with guacamole, cheese, and Lime & Herb Super Grains, making them an excellent appetizer ahead of a Mexican food dinner.

Ingredients

  • 1 pack Tilda Super Grains Lime & Herb
  • ½ avocado, chopped
  • 3 tbsps guacamole
  • Squeeze of lemon juice
  • 3 medium tomatoes, finely chopped
  • Handful fresh coriander, finely chopped
  • 125g cream cheese
  • 2 tbsps sour cream
  • 2 tsps Mexican seasoning (optional)
  • A few basil leaves
  • Salt and pepper to season

Cook

  1. Mix the avocado and guacamole together with a squeeze of lemon juice
  2. Press into the bottom of a tall ring mould about 6cm in diameter
  3. Follow with a layer of the Tilda Super Grains Lime & Herb, pressing down well
  4. Mix together the tomatoes and coriander and season with salt and pepper
  5. Add to ring mould and press down well on top of the grains
  6. Mix together the cream cheese, sour cream and Mexican seasonings if using
  7. Gently add to the layer of tomatoes
  8. Leave to chill in the refrigerator for 30 minutes or longer if you have time
  9. Carefully lift the ring mould off
  10. Garnish each with a couple of basil leaves
