These lettuce boats are great finger food for a party. The signature Thai taste comes from the green curry paste, lemongrass, and coconut milk.

  • Tilda Coconut Steamed Basmati Rice
  • Sweet Potato
  • Red Onion
  • Fennel
  • Ginger and Garlic
  • Coriander
  • Lemongrass
  • Coconut Milk
  • Fish Sauce
  • Chilli
  • Green Curry Paste
  • Cod
  • Lettuce


  1. Chop all red onion, fennel and grate sweet potato


  1. Marinate cod with green curry paste, chilli, lemongrass, fish sauce, ginger, garlic, coriander and coconut milk. Leave to simmer until cooked
  2. Fry off red onion, fennel and grated sweet potato
  3. Mix rice, chilli and sweet potato salad mix in a bowl
  4. Fill lettuce leaves with the rice salad mix and top with cod to serve your lettuce boat
