A tasty tofu and quinoa dish for vegetarians influenced by a variety of cuisines and ingredients.

  • Tilda Brown Steamed Basmati Rice & Quinoa
  • Cauliflower
  • Aubergine
  • Tofu
  • Tenderstem Broccoli
  • Chipotle Paste
  • Green Chilli
  • Mint
  • Pomegranate
  • Avocado
  • Baharat Spice Mix


  1. Marinate tofu in baharat spice and char the cauliflower in a pan
  2. Add the broccoli and tofu to the cauliflower in the frying pan and stir through chipotle paste
  3. Dice the aubergine and fry in a seperate pan, add with the other ingredients once cooked. Thinly slice a green chilli and add
  4. Make a side of smashed avocado with some mint
  5. Decant tofu and vegetable mix into a bowl, ready to serve, add the rice. Garnish with mint and pomegranate
