Ingredients
- Tilda Coconut, Chilli & Lemongrass Steamed Basmati Rice
- Prawns
- Aubergine
- Ginger
- Shallots
- Broccoli
- Mushrooms
- Coconut Milk
- Coconut Milk
- Green Curry Paste
- Lime
- Desiccated Coconut
- Coriander
Cook

Chop all vegetables. Add garlic, shallots and ginger to pan and fry

Add in the rest of the veg to the pan and green curry paste

Stir well, add coconut milk and let it simmer

Add in prawns, lime, desiccated coconut and leave to simmer until prawns are cooked through

Finely chop coriander to garnish and serve with rice
