Cod tacos with a super Mexican salsa. Add some chillies to up the spice levels.

  • Sweet Potato, Chilli & Coconut Super Grains
  • Sweet Potato
  • Sweetcorn
  • Pinto Beans
  • Kidney Beans
  • Onions
  • Tomatoes
  • Spring Onions
  • Cod
  • Garlic
  • Coriander
  • Chipotle Paste
  • Tacos


  1. Cook the diced sweet potato in a pan until soft
  2. Add in onions, garlic and sweet chilli rice
  3. Add in both beans, tomatoes, sweetcorn, chipotle paste and coriander
  4. Make a salsa separately using tomato, spring onions and coriander
  5. Fill tacos and serve with salsa
