Whether with tofu or chicken, this Moroccan inspired dish is super versatile. Mix it up!

  • Tilda Brown Basmati & Wild Rice
  • Tofu
  • Garlic
  • Aubergine
  • Courgette
  • Dried Apricots
  • Chickpeas
  • Spring Onion
  • Mint
  • Shallots
  • Baharat Spice Mix


  1. Marinate tofu in baharat and sunflower oil, chop shallots, garlic, aubergine and courgettes


  1. Fry off the prepared veg, and chop apricots and spring onion
  2. Add tofu to pan and baharat spice
  3. Add lemon zest, rice and chickpeas to the pan and fry for a few minutes
  4. Plate up the meal and garnish with apricots, mint and spring onion
