We love these veggie Middle Eastern lettuce pots with halloumi, perfect for entertaining.

  • Vegetarian


  • Tilda Lime & Herb Super Grains
  • Apricots
  • Pomegranate
  • Fennel
  • Carrot
  • Lettuce
  • Chickpeas
  • Sumac
  • Tagine Paste
  • Halloumi
  • Mint Leaves
  • Orange
  • Lemon


  1. Chop up the apricots, mint leaves, fennel, peeled carrots and add to a bowl
  2. Peel the orange and cut into small chunks, add to bowl


  1. Slice halloumi and pan-fry. Once golden, add halloumi to salad bowl
  2. Add in the rice, mix well and dress with a lemon and pinch of mint
  3. Dish into lettuce cups and serve
