The sumac and baharat are the base on what you want when building up a Middle Eastern dish. Dial up the the spices for a more intense flavour!

  • Tilda Brown Basmati & Quinoa
  • Cauliflower
  • Courgette
  • Aubergine
  • Tagine Paste
  • Sumac
  • Chickpeas
  • Apricots
  • Baharat
  • Lemongrass
  • Mint
  • Pomegranate
  • Lime


  1. Sweat the onions, then add the chopped aubergines and courgettes to the pan. Add a little water to steam
  2. Add in chickpeas and chopped apricots
  3. Sprinkle In some baharat, salt, pepper and a squeeze of lime
  4. Steam the rice
  5. Add the vegetables to the rice. Garnish with pomegranate and mint
