Vegetarian Baked Vegetable Biryani

Dice 250g cooked baby potatoes and pan-fry in oil with a sliced onion until golden. Stir in 1 tablespoon garam masala and 1 clove of chopped garlic. When the potatoes are golden and the spices are aromatic, add a few sliced okra.

Now stir in the Tilda Pilau rice, some toasted flaked almonds and some golden sultanas, and after about 3 minutes, when the rice is piping hot, add 4 tablespoons natural yoghurt. Serve straightaway with a handful of chopped coriander.

Lamb Biryani

Fry 250g thinly sliced lamb in a tablespoon of oil, and when it is all sizzling, stir in 1 tablespoon garam masala and a clove of crushed garlic.

Add a few sliced okra and cook for a couple of minutes.

Spoon over the Tilda Pilau rice with a handful each of toasted flaked almonds and golden sultanas. Stir it all gently together - about 3 minutes, when the rice is piping hot, stir in 4 tablespoons of natural yoghurt. Serve straight away sprinkled with a handful of chopped coriander.
