Mediterranean rice with feta
Heat a little olive oil in a pan over a gentle heat and fry a few halved black olives with 50g chopped sunblushed tomatoes.
Stir in a large handful of rocket leaves and , when the rocket is wilted add 125g diced feta cheese.
Spoon in the Tilda Chickpea, Yoghurt and Mint rice and stir until it is all heated through – about 3 minutes.
Serve hot with toasted pitta bread and natural yoghurt drizzled over. |

Cook 2 sliced chicken breasts until golden in a little olive oil over medium heat. Add some halved black olives, and 50g chopped sunblushed tomatoes.
Stir in the Tilda Chickpea, Yoghurt and Mint rice and when it is all heated through - about 3 minutes, stir in a large handful of chopped rocket leaves.
Serve piping hot with toasted pitta breads and natural yoghurt drizzled over. |
